Recipes: Nutty Date Bars

Have you got a bit of time for some baking? Good. You won’t regret making these.. not - one - bit. These nutty date bars are packed full of goodness; loaded with anti oxidants, minerals, fiber and protein, they are a sweet tooth dream! The combination of dates & the slightly bitter tahini has always been a winner for us! These bars are super soft & chewy, made up of a date paste, ground nuts & flax seeds. We’ve also made it that little bit more indulgent and glazed these bars with melted dark chocolate and a finishing of sea salt. These work perfectly as a snack option for any time of the day. Ingredients

230g medjool dates

1/2 cup finely processed walnuts

1/3 cup finely processed almonds

1/3 cup pine nuts

1/4 cup pumpkin seeds

1/3 cup ground flax seeds

1 cup puffed rice (we used KALLØ Organic)

1/2 tsp ground cardamom

1/2 tsp ground cinnamon

3 tbsp tahini

2 tbsp oat milk (or any milk of your choice)

topping:

1/3 cup dark chocolate (70% cacao solids)

1 tbsp rapeseed oil

sea salt flakes, to finish

Instructions

Preheat the oven to 160c

Soak the medjool dates in boiling water for roughly 15 minutes.

Line a medium loaf tin with a piece of baking paper.

Add your almonds & walnuts into a food processor and pulse until fine.

Mix all the dry ingredients (almonds, walnuts, pumpkin seeds, pine nuts, puffed rice, flax seeds, ground cardamom, ground cinnamon) together in a large mixing bowl.

Place drained dates, tahini and 2 tbsp oat milk in a food processor and process until smooth.

Using your hands stir the date and tahini mixture with the dry mixture. Ensure all is incorporated.

Spread the mixture in the baking tin. Press mixture down firmly.

Bake for 30 minutes, until slightly browned. Do not take out of loaf tin. Let cool for at least 1 hour.

Over a simmering pan of water, place your dark chocolate and 1 tbsp rapeseed oil in a glass bowl.

Spread the melted chocolate on the cooled bars and sprinkle with some sea salt flakes. Refrigerate until the topping has set (approx. 2 hours)

Cut into squares or strips (as you wish) with a sharp knife. Store the bars in an airtight container.
